Sun Dried Tomato & Mozzarella Salad

A simple summer salad recipe that’s full of flavour. 


  • 10 sun dried tomatoes (add more to taste)
  • 6oz mozzarella cheese (sliced)
  • 2 cups spinach
  • 1 cup pea shoots
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1/4 cup fresh basil
  • 1 lemon to taste


  • Place the spinach and pea shoots into a large serving dish, we’ve chosen our Studio Grey Large Ridged Bowl
  • Add the slices of mozzarella cheese and sun dried tomatoes on top
  • Combine olive oil, balsamic vinegar, salt and pepper in a container with a lid and shake well
  • Once mixed, drizzle over your salad
  • Garnish with basil,  and lemon to taste
  • Serve with toasted sourdough
