A quick, easy and colourful recipe for you to enjoy on the barbecue this summer.
Ingredients
- 300g chorizo
- 16 large prawns
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/2teaspoon dried mint
- Slices of lemon to serve
Method
- Chop the chorizo into chunks similar in thickness to the prawns
- Add the chorizo, prawns, olive oil, lemon juice and mint to a bowl and toss to mix the ingredients thoroughly
- Set aside at room temperature for 30 minutes
- Preheat the barbecue, if using a griddle pan do not put over a direct flame
- Arrange the chorizo pieces, prawns and tomatoes onto each skewer
- Cook the skewers for 3-4 minutes on each side (or until cooked)
- Serve with lemon
