Prawn & Chorizo Skewers

A quick, easy and colourful recipe for you to enjoy on the barbecue this summer.


  • 300g chorizo
  • 16 large prawns
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2teaspoon dried mint
  • Slices of lemon to serve


  • Chop the chorizo into chunks similar in thickness to the prawns
  • Add the chorizo, prawns, olive oil, lemon juice and mint to a bowl and toss to mix the ingredients thoroughly
  • Set aside at room temperature for 30 minutes
  • Preheat the barbecue, if using a griddle pan do not put over a direct flame
  • Arrange the chorizo pieces, prawns and tomatoes onto each skewer
  • Cook the skewers for 3-4 minutes on each side (or until cooked)
  • Serve with lemon
