Celery, Apple and Walnut Salad

This is our version of a Waldorf Salad and it’s great served with our Sticky Christmas Roast Gammon.

Approx 15 minutes

Ingredients:

1 Romaine or Cos lettuce, washed and roughly chopped

2 eating apples

½ lemon, juice only

2 sticks celery, sliced

Handful red grapes, washed and halved

Pinch sea salt

Freshly ground black pepper

2 tbs low fat yogurt

2 tbs mayonnaise

1 tsp honey

Large handful toasted walnuts, roughly chopped

Method:

  1. Prepare the lettuce and place into a large serving bowl or platter
  2. Wash, core and chop the apples and place into a mixing bowl. Squeeze the lemon juice over the apples and toss well to stop them from browning
  3. Add the celery and grapes to the apples and season with salt and pepper. Mix together the yogurt, mayonnaise and honey and pour over the fruit and celery. Toss to coat and place on top of the lettuce on the serving plate. Scatter over the chopped walnuts and serve.
